In Denmark there are only a few special nights when darkness never really comes. Long summer days and even longer summer nights are never complete without some kind of seafood dish. Prawns (shrimp) come in so many different sizes, and the tiny fjord prawns (shrimp) are a family favourite, although peeling them takes an age compared with how quick they are to devour.
