Pea and Mint Soup

I still to this day dream of getting lost in Danish pea fields. We used to sit there for hours, opening the pods and eating peas by the hundred, the scent lingering so deeply in my memory bank. Although those days are long behind me, one of the first things I do when I go to Denmark for my summer holiday is to buy a big bag of fresh peas from one of the many local street vendors.
