Mushroom Soup

I don’t know what it is about mushrooms, but I just love them – the extraordinary texture, the gush of flavour and the often-funny shapes. As children, my sister and I would often persuade our father to take us to London for the weekend. Our first stop was Drones for lunch, where we devoured fried potato skins with crème fraîche and chives. Dinner would most often be Italian, where I would have wild mushrooms sautéed with garlic and parsley as a starter, and then again as a main course! Thi
