In a frying pan (skillet), heat the olive oil, then add the onion and gently fry for a few minutes, then add the tomato purée (paste) and simmer for another minute. Next add the chopped tomatoes and salt and simmer for 15 minutes.
Add the smoked mackerel fillets and lemon juice and simmer for 10 minutes, then remove from the heat and leave to cool.
