Place all the marinade ingredients except the cloves in a large saucepan and bring to the boil. Leave to simmer for 5 minutes, then add the cloves, remove from the heat and leave until completely cold.
Cut the roll mops into 2–3cm (¾–1¼ inch) pieces, and when the marinade is cold, pour it over the roll mops.
Transfer the roll mops and marinade into a bowl and add the onion slice
