Slice the roll mops into 2–3cm (¾–1¼ inch) pieces.
Peel, core and finely chop the apple (the tinier the better) for the curry sauce. Mix together all the curry sauce ingredients, then pour it over the roll mops.
If using, place the eggs in a saucepan of cold water, then bring to the boil and boil for 10 minutes. Leave to cool, peel, then chop roughly and add to the curried roll
