White Asparagus and Prawn Salad

Ingredients: ½ tsp pink Himalayan salt or sea salt; 100 ml (3½ fl oz/scant ½ cup) olive oil; 2 tbsp asparagus water (reserved from cooking the asparagus); 400 g (14 oz/13 cups) spinach leaves or romaine lettuce leaves, roughly chopped; juice of ½ lemon; 250 g (9 oz) uncooked prawns (shrimp); 8 cherry tomatoes, finely chopped; 1 avocado, cut into small cubes; ½ cucumber, skinned, deseeded and cut into small cubes; 4 tbsp olive oil; 1 small red onion, finely chopped; 1 small clove of garlic, finely chopped (optional); 1 tsp salt; 16–20 white asparagus spears

Is there anything more delicious than white asparagus when in season? Served with homemade Hollandaise sauce or a simple vinaigrette, this is a salad I started making when I began working as a model. I needed healthy food that was easy to make, tasted delicious, and was suitable for any time of day or night. All my salads are pretty simple and very scrummy I think, so enjoy.
