This salad is adored in my family, and is a lovely starter or summer lunch. Its origins are in Sweden, and my Swedish mother and grandmother were both experts at making this. You can use lobster tails, crayfish tails or large prawns (shrimp), depending on what is available. Fresh dill is a herb that complements most fish and crustaceans. In Scandinavia, we even add fresh dill when boiling new potatoes.
