This dish is one I first came across as a child in St Croix, in the US Virgin Islands, a Danish colony until it was sold to the Americans in 1916. I have also enjoyed it while travelling in America, visiting my sister when she studied History of Art at UVA (University of Virginia). Most often served raw, rather than blanched, I have always wondered if the Americans were perhaps inspired by the Danes? Either way, it’s a classic and utterly delicious salad.
