Ingredients: 3 tbsp soy sauce; ½ cucumber, skin removed, cut into thin strips; ½ small red cabbage, cut into thin slices; 100 g (3½ oz/1½ cups) chopped kale leaves (stalks discarded); ½ small white cabbage, cut into thin slices; 6–8 tbsp olive oil; 1 courgette (zucchini), cut into thin strips; 3 spring onions (scallions), cut into thin strips; 1 tbsp finely chopped coriander (cilantro); 1 tbsp finely chopped tarragon; 2 tbsp lemon juice; 2 carrots, cut into long, thin strips; 1 tbsp finely chopped parsley; 1 tbsp finely chopped basil; ½ tsp pink Himalayan salt or sea salt; 100 g (3½ oz/3⅓ cups) baby spinach, cut into thin strips; 1 long red Romano pepper, cut into thin strips; 2 tbsp pumpkin seeds; 1 tbsp chopped coriander (cilantro); ¼ tsp mustard powder; 2 tbsp balsamic vinegar; 1 tbsp chopped chives; 250 ml (8½ fl oz/1 cup) sour cream or crème fraîche; ¼ tsp salt; 1 small carrot, grated; 1 small courgette (zucchini), grated; 25 g (1 oz/2 tbsp) butter; 1 clove of garlic, crushed; 2 tbsp sunflower seeds; 8 tbsp breadcrumbs

I remember falling in love with this dish years ago at my old boarding school, Herlufsholm Kostskole – krebinetter was in fact the hot meal that I enjoyed the most there. At school it was served with a pasta salad, which I found too soft. What I really love here is the warm and soft patties meeting the crunchy and salty salad – my idea of a fantastic combo.

Remember ingredients can always, in my opinion, be exchanged for something else. Don’t let not having a few ingredients
