Kirsten’s Marzipan Cake with Banana and Date Ice Cream

Since I was a child, if my godmother Kirsten wasn’t serving rice pudding with a lump of butter and cinnamon sugar for pudding, then she would have made this marzipan cake instead, whether for a bridge lunch or a glamorous dinner party. I am thrilled that she has agreed to share this ‘masterpiece’. Mamor Kirsten, as my children call her, has become exactly this, my children’s grandmother, a promise she made to my mother before she died.
