This is a must for every Danish child’s birthday. It originally comes from the island of Fyn, which is also called ‘Brunsviger’, and there are many different variations. Being such a fan of coconut, my version of this traditional birthday cake reflects this love. It is very typical in Denmark, if you don’t bake, to order your child’s birthday cake from your local bakery.
