In a blender or food processor, blend all the ingredients except for the desiccated coconut until combined.
Place the desiccated coconut on a small plate.
Take out a large spoonful of the mixture and shape it into a small sausage or stick shape, then roll in the desiccated coconut. Repeat with the rest of the mixture. Put in the fridge to set.
