Put the sugar and water in a large saucepan. Heat slowly over a low heat and allow the sugar to melt completely, then add the lemon slices and elderflower heads. Stir well, then turn off the heat. Place the saucepan in a cool place and stir every few hours for 4 days, then filter through a muslin (cheesecloth). Pour into sterilized bottles and store in a cool, dark place. This will keep for 7–1
