Put the elderberries into a large saucepan and add the water. Over a low heat bring just to the boil, then allow to gently simmer for about 30 minutes. Pour the elderberries through an old muslin (cheesecloth), then pour just the juice back into the saucepan. Add the sugar and lemon and simmer for another 15–20 minutes, by which time the sugar should have completely melted. Pour into sterilized
