Rinse the potatoes of their starch under running water, or in several changes of water, for about 5 minutes.
Put into a large saucepan and cover with cold water. Add the salt and the bay leaves. Bring to the boil and simmer until tender, which will take up to 30 minutes.
Remove the potatoes from the water. Discard the bay leaves and steam-dry for 5 minutes.
