Ideally use a light, summer-drinking red, like a Fleurie or Pinot Noir, to make the most of this dish.
Wipe and hull the strawberries. Bring the wine, sugar, vanilla and cinnamon to a gentle boil in a saucepan. Drop the strawberries into the red wine. Bring to the boil and immediately remove from the heat and cover. Set aside until the wine and strawberries have cooled. At this stage the fruit should be perfectly poached, soft yet still holding its shape.
