The Welsh cake, teisen lap, is a very traditional spiced, moist fruit cake. Use the best figs you can find, from Provence, Italy or Greece. Leave the Brazilian ones well alone! For the lavender honey, simply infuse a good-quality honey with a small bunch (3–4 sprigs) of dried lavender to taste. Leave to mature in the jar, then use as you would plain honey.
