Don’t be put off by the long ingredient list. Once the marketing is done, the preparation is simple. These elegant and delicate cylinders of vegetables and seafood may be made in advance, covered with a damp towel, and refrigerated. Easier still on the cook, simply present the cooked filling and the spring roll wrappers separately, Vietnamese style, and allow each guest to assemble his or her own roll just before eating.
