This sorbet is an ideal example of an intermission, the delicate and refreshing pause between courses. With its flowery roundness of flavor, Chinese Jasmine tea is an ideal candidate to star in a frozen ice. Its heady fragrance is made more intoxicating with the addition of lemongrass (Cymbopogon citratus or citronella), much favored in Southeast Asian cooking. As a dessert, this tops off any meal with palate-cleansing freshness.
