This light dessert is unsurpassed for refreshment when the heat of summer rolls around. A study in white, this frozen treat, surmounted with some well-chilled canned Asian rambutan or lychee fruit (which are also white), would end a spicy Asian meal on a satisfying note. Serve it in the darkest colored bowls or goblets you have to set off its pristine whiteness beautifully. White tea weighs almost nothing, so be generous when measuring to infuse the syrup for this iced treat.
