Put the cream in a saucepan with the chocolate, sugar, and cinnamon stick. Give a bartender’s twist to the lime zest to release the oil and drop it into the cream. Place over medium-low heat and stir with a wooden spoon until the chocolate melts and the sugar dissolves. Simmer gently until well flavored, about 10 minutes. Let the cream cool for 5 to 10 minutes.
