The warming, winter flavors of juniper and cinnamon make this unusual sorbet, sweet but with a pungent aftertaste, a good accompaniment to apple pie. To pick up the juniper, add a splash of gin at serving time.
Put the juniper berries in a plastic bag and crush them with a rolling pin or the base of a heavy saucepan. Put the water and sugar in a saucepan and heat gently until the sugar dissolves, stirring occasionally. Add the crushed juniper berries and cinnamon sticks and bring just to a boil. Remove from the heat, let cool for 2 minutes, then bring back to a boil. Repeat the boiling and cooling 6 t
