Mushrooms make a fine and luxurious soup. To make this soup even more elegant, stir in a few tablespoons of sherry at the very end.

Method

Clean the mushrooms carefully. Separate the stems from the caps and then chop them both. Keep the chopped stems separate from the chopped caps.

Cook the onion slowly in 3 tablespoons [6 tablespoons
