Cauliflower is not a versatile vegetable, perhaps because of its powerful savor. This soup is rich and delicate, and will be loved by the staunchest cauliflower hater.
Melt the butter in a large, heavy saucepan and cook the onion in it over low heat until golden. Add the chicken broth and bring to a boil.
Wash and drain the cauliflower; then separate it into florets. Add the cauliflower to the broth and reduce the heat to a simmer. Let cook until cauliflower is tender.
Puree the broth and cauliflower in a food mill. Add cream to thin, and salt
