Chicken Parisienne

A “safe” casserole for crowds whose tastes are unknown. It is delicious, but no one’s palate will be surprised.

If you substitute canned tomato sauce, add thyme and bay leaves.

Use Romano alone if you like, if the cost of 6 cups of Parmesan is too much. If you can buy solid Romano or Parmesan and grate it yourself, you will have a more pungent, fresher cheese.
