This is a thick, rich chili, which should really be made ahead, at least a day and better two, before serving. It can be stretched with extra red kidney beans. Serve with fluffy rice, or just salad and crusty bread.

Coriander is available in Spanish markets, where it is called “cilantro” and in Chinese markets where it is called “Chinese parsley.”
