A vindaloo is a dry and very hot Indian curry. It can be made gentler, as long as it has a “bite.” The important thing is to give the pork a long marination in vinegar, to produce a “pickled” taste. Serve it with a cucumber raita, and Orange Rice Pilaf.

Place the pork cubes in a glass or enameled bowl and mix with 2 teaspoons [4 teaspoons, 2 tablespoons,
