This is a less familiar Indonesian dish than rijstaffel, the twenty- or thirty-dish meal served in Amsterdam and Bali. Like rijstaffel, nasi goreng is essentially rice with garnishes, but it is easier to make.

Sesame oil is available in Chinese and Japanese markets.

Method

Cut the chuck into thin strips and place in a large mixing bowl. Combine with a little of the peanut oil, the garlic, onion, coriander, curry powder, and cayenne, and mix well. Let stand at least 1 hour.

Combine the chicken, soy sauce, sesame oil, cornstarch, and ginger and let stand 1 hour. (You can be making the egg pancakes.)
