Egg Pancakes

Combine all the ingredients and mix well. Heat a skillet and brush with oil lightly. Pour enough egg mixture to cover bottom of skillet and cook until firm over low heat. Repeat until mixture is used up. They may be stacked and then sliced into thin shreds for a garnish.
