This sauce is rich and thick. You can adjust the amount of tomatoes to suit your taste, but don’t forget the sugar—it seems to bring out the tomato flavor. This is definitely better when made at least one day ahead.
Heat the oil in a heavy casserole or large skillet. Cook the onions for about 10 minutes, stirring, until they just begin to brown. Add the ground beef, stirring and breaking up lumps as it browns.
Rinse mushrooms quickly and drain. Remove tough stems of large ones. Quarter. Add the mushrooms and cook, stirring, for about 3 minutes; then add all the remaining ingredients and bring to a
