Pesto is a remarkable, inimitable sauce for meats, vegetables, and, most successfully, for pasta. It is a summer mixture, because it depends on fresh basil—although if you are good at growing it indoors, in quantity, you can have it any time. I have never been able to grow enough indoors to have a meal of pesto without completely destroying my crop. Serve it tossed with thin spaghetti as a main dish.
