The sauce on these noodles is rich and filling. With this dish you might serve Momos and a light pickled vegetable. It is nicest made with fresh Chinese noodles, which you can get from Chinese noodle factories or grocers, but linguine or medium spaghetti will do.
Hoisin sauce is a thick, pasty sauce made from yellow beans, and is sold here in cans in Asian groceries and specialty markets.
