A “smothered turkey” can be a fine, exotic change from the usual stuffed and roasted bird. You can make all kinds of substitutions for the ingredients—raisins for the prunes, small, pickled green peppers for the olives, and so on—or you can leave out any of the above. This Caribbean dish is quite a hearty one.

To facilitate peeling the onions and the garlic, drop them in boiling water for 10 seconds and drain them in a colander.
