Nonna Romana likes to recall when she and her seven brothers and sisters would go into la campagna (the countryside) of Mola di Bari to celebrate la Pasquetta. Such an occasion would require a frittata fit for an army! Today, our family celebrates la Pasquetta in Nonna’s Brooklyn basement apartment, but this frittata, which is baked instead of fried, keeps filling our stomachs and our souls, year after year.
