Nonna Romana Sciddurlo’s Stuffed Calamari with Spaghetti

Helping Nonna Romana stuff calamari brings back so many memories from my childhood. She would ask me to help her because my little fingers were best for getting all the stuffing inside the calamari tube. Today, we still do it together but with demitasse spoons instead. We then cook them in a slightly spicy tomato sauce and say a prayer that the filling doesn’t come out as the calamari shrink.
