Wok-Seared Salt & Pepper Shrimp

This casual appetizer calls for just six ingredients and a few minutes of your time, so it’s important that your spices and other ingredients are at the peak of freshness. The mixture of black, pink, and Sichuan peppercorns creates a sweet-citrusy-peppery flavor that perfectly complements briny shellfish.

Ingredients

  • 1 tsp mixed black, pink, and Sichuan peppercorns
  • 2 lb (1 kg) medium shrimp in the shell
  • Sea salt
  • 2 Tbsp canola oil
  • 4 cloves garlic, minced
  • Lemon wedges for serving

Method

Using a mortar and pestle, finely crush peppercorns.

In a bowl, combine shrimp, half of peppercorns, and 1 teaspoon salt and toss together. Set aside.

In a wok or large frying pan, heat oil over high heat. Add garlic, remaining peppercorns, and 1 teaspoon salt and cook, stirring, for 1 minute. Add shrimp and cook, stirring, until opaque throughout, 3–4 minutes. Serve right away with lemon wedges, with a small bowl for discarded shells alongside.
