This is a great example of how spices can add an exotic flair to everyday market ingredients. In this case, toasted sesame seeds, reinforced by fragrant sesame oil, lend Asian flavors to simply sautéed spring peas, a dish that’s usually seen in England and North America.
In a dry pan, toast sesame seeds over medium heat, watching carefully, until golden brown and fragrant, 4–5 minutes. Pour onto a plate and set aside to cool.
