These boldly spiced ground meat patties are based on kofte, a classic dish from Turkey. There, they are usually spicy, so feel free to add more cayenne pepper if you like your food on the hot side. Serve with grilled vegetables, or tuck them into warm pita bread rounds with sliced tomato and onion.

In large bowl, combine lamb, veal, coriander, cumin, cayenne, 1 teaspoon salt, and ¼ teaspoon black pepper and mix with a fork to combine. Cover and refrigerate for at least 6 hours or up to 24 hours.
