Leek and Potato Soup with Cream

Method

Leek and potato soup is, as noted, a very good and basic peasant dish (originally made, by the way, with water instead of chicken stock). To glorify the same dish one need only add 1 cup heavy cream, bring just to a boil, and taste for seasoning. If necessary, add salt and pepper. Serve hot, sprinkled with chopped chives.
