Let the shrimp cool in the liquid in which they cooked. Drain. Then, using a pair of kitchen shears, split the shrimp down the back shell. Peel off the shell.

With a small knife, peel or pare away the covering along the rim of the back of each shrimp. Pull this away and clean the small black or red intestinal tract along the rim of the back. If necessary, rinse the shrimp under cold water to remove. Drain the shrimp on absorbent toweling.
