  • 2 cups sifted flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 4 tablespoons (¼ cup) shortening
  • 1 egg, lightly beaten
  • 1 cup milk

Method

  1. Preheat the oven to 400 degrees.

  2. In a mixing bowl, combine the flour, salt, baking powder, sugar, and shortening. Using a pastry blender, cut in the shortening until it has the consistency of coarse corn meal. Stir the egg into the milk and add it to the flour mixture. Stir just enough to moisten the dry ingredients to produce a lumpy batter.

  3. Rub a dozen muffin cups with shortening and fill each two thirds full. Bake for 20 to 25 minutes.
