Method

Before adding beaten eggs to the skillet as in the preceding recipe, add approximately ½ to 1 teaspoon of chopped tarragon for each 2 eggs. Remember that dried tarragon is considerably stronger than fresh and that the pungency of even fresh herbs varies. That is why approximate herb measurements are given.
