Method

Follow the preceding recipe for fried eggs but add 4 tablespoons of butter to a separate skillet. Cook over moderate heat until the butter is dark brown. Add approximately 1 tablespoon of vinegar and pour over the eggs. Sprinkle with parsley and capers and serve hot.
