Ingredients: 1 teaspoon baking soda (bi-carb soda); 4 ripe bananas (500 g / 17.6 oz); 3.5 oz (100 g) milk chocolate; ⅓ cup (100 mL / 3.4 fl oz) heavy cream (35 percent fat); ¾ cup (160 g / 5.6 oz) caster sugar or superfine sugar; 6 large egg yolks (90 g / 3.2 oz); ¾ cup (200 mL / 6.8 fl oz) milk; ¼ cup (55 g / 1.9 oz) sugar; ⅓ cup (70 g /2.5 oz) caster sugar or superfine sugar; 2¼ cups (360 g / 12.7 oz) plain or all-purpose flour; 1 tablespoon (15 mL / 0.5 fl oz) milk; 1 quart (1 litre / 0.25 gallons) milk; 1 egg (45 g / 1.6 oz); 2 cups (430 g / 15 oz) sugar; 3 teaspoons vanilla extract; 1¼ cups (300 mL / 10 fl oz) heavy cream (35 percent fat); 4 over-ripe bananas (500 g / 17.6 oz); ¾ cup (185 g / 6.5 oz) chilled butter
