Ingredients: 1⅔ cups (375 mL / 12.7 fl oz) heavy cream (35 percent fat); 2 Tahitian grade A gourmet vanilla beans; 1 cup (150 g / 5.3 oz) caster sugar or superfine sugar; 1⅔ cups (375 mL / 12.7 fl oz) crème fraîche; 8 egg yolks (120 g / 4.2 oz); 2.5 oz (70 g) Amedei Chuao Napolitains dark chocolate; ¼ cup (65 mL / 2.2 fl oz) heavy cream (35 percent fat); 1 spoonful of Grand Passion whitefish roe (dessert caviar); Candied fruits from Paris; 1 Madagascan vanilla bean; 7 gold sugarcoated almonds; 5 sheets edible gold leaf; 3 squares Amedei Porcelana Napolitains dark chocolate; Gum paste cattleya orchid sprayed with edible gold food coloring; 2 chocolate truffles
