Esin used to be a picky eater and particularly hated celery root. After many years of picking it out of things her mother would cook, she stopped by a friend’s home, who practically demanded that she try the dish she had prepared — with celery root. To her surprise, Esin loved the dish and now makes it often.

  • 3 medium celery roots (660 grams)

Method

Squeeze the juice of the lemon into a large bowl of water, then, as you peel and cut the celery roots into 2.5-cm (1-inch) chunks, drop the chunks into the water to prevent discoloring. Peel the potato and cut into 2-cm (¾-inch) chunks, adding them to the water as you go.
