This soup is an easy way to include more vegetables into your diet. The vegetables are left chopped, but they can also be blended into a puree, as Fatima did when her children were young. She also adds parsley and fresh coriander to give color and flavor.
Use whichever seasonal vegetables you have at home. Some cooks add rice, vermicelli, or dumplings to the soup to give a different flavor and thick texture.
