Asida is a staple food that can be served as a dessert (see note) or with savory main dishes such as soups and stews, where it takes the place of rice, bulgur, potatoes, and other starches. Although its ingredients are basic, technique is required to ensure a lump-free porridge: adjust the heat as you’re cooking, to be neither too high nor too low. A stainless steel pot works best. Pay attention as you go — it’s easy to over or undercook.
