Since Malatya is famous for its wide variety of pungent, sweet, and colorful apricots, the fruit is used in many dishes. This dried apricot dessert is quite popular — it’s easy and just the thing for when a guest arrives after dinner, or an unexpected guest comes for afternoon tea.
Soak the dried apricots in water for one hour, until softened. Drain and put them on paper towels, then pat dry.
Make the syrup: stir the water, sugar, and cloves in a medium saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar, then add the lemon juice and continue boiling for 5 minutes. Remove from heat.
